Huevos Rancheros

If I could only eat one "genre" of food for the rest of my life, without thinking I would opt for Mexican food. You've probably noticed my affection for corn tortillas in many recipes, but my favorite time to eat them is for breakfast. Billy knows, whenever I'm at a legit Mexican restaurant, I'll order Huevos Rancheros as often as possible. I don't want fancy -  I want fresh ingredients, a perfectly fried egg, and flavorful salsa.

For some unknown reason, this has been an "order out" dish for me, and I never tried making them at home. Fortunately, that's no longer the case! I now throw together huevos for one (if necessary) or a crowd super fast.

Here's what you need:

  • Corn tortillas
  • Black beans, heated
  • Fresh salsa or pico de gallo
  • Grated Queso Blanco (mild) or Pepper Jack Cheese (spicy)
  • Eggs, fried
  • Cilantro (on the side since not everyone likes cilantro)
  • Tapatio or a gringo hot sauce, to taste

Start by browning a corn tortilla. If you have a griddle heated, use that.  If you don't have a griddle, lightly coat a frying pan. Use medium to medium high heat.

Slide your tortilla onto a plate and start decorating!!  Add heated black beans.Add other toppings to your liking. For me, this includes salsa, cheese, cilantro.Then, for the "huevos" part, cook an egg, sunny side up and top your tortilla.  Typically I fry my eggs on one burner and heat the tortillas on another, but either process can get away from you, so pay attention to the temps!If you like some extra heat, top with some Tapatio!
