Greek Meatballs
Last week I raved about the Whole Foods App for recipes, and, as a result, I remembered ANOTHER Whole Foods wonderful default recipe that's made it into my weeknight routine. I love this recipe because I almost always have the ingredients handy and it comes together SUPER quick. So if you're generally overdoing the cooking this weekend and need something NOT requiring much work, give this recipe a try.
Here's the scoop on what you need:
- 1 lb extra lean ground beef
- 1 jar (12 oz) Roasted Red Peppers (I always have a jar in the pantry since they punch up so many meals)
- 1 cup Feta Cheese (Again, I always keep this in the fridge!)
- 1/2 cup chopped flat leaf parsley (I have regular parsley in the garden, so I use that, but you can also used 2 tsp dried)
- 2 Tablespoons, chopped Mint
- 2 Tablespoons, chopped Oregano (I DON'T have this in the garden, so I used 2 tsp dried instead)
- 3 cloves minced Garlic
- 2 tsp lemon juice
- 2 tsp lemon pepper
- 1 tsp salt
Preheat the oven to 350 degrees. Begin by draining, patting dry, and cutting up the red pepper.Combine all of the ingredients. Say, "ooo" and "ahh" when all of the pretty colors are in the bowl!!
Scoop into roughly tablespoon sized balls and place on an ungreased cookie sheet.Bake for 25 minutes or until cooked through.Boom! Just like that, dinner is done. I like the taste of the meatballs plain, but you could also toss with a tomato sauce and serve with noodles.
