Years ago I was in a small group and one of my friends, Kate, would bring these delicious nuggets to group, and I'd eat my weight in their goodness.  Time has not cured my addictive tendencies, so, as a result, I only make these when I'm expecting company. You've been warned.

If you decide to proceed in making these yourself, here's what you'll need:

  • 2 cups extra sharp cheddar cheese
  • 1 cup flour
  • 1 1/4 cup Parmesan cheese, grated
  • 1 cup Rice Krispies
  • 1/2 cup butter
  • 1 tsp Worcestershire sauce
  • 1/4 tsp table salt (NOT kosher)
  • 1/8 tsp chili power
  • Tabasco sauce to taste (as little as a dash up to 1/4 tsp)

In a glass bowl, slice the butter.Combine the rest of the ingredients except for the cheese. Note: in the picture below, I didn't use grated Parmesan cheese.  Rather than run to the store (who needs that?!), I substituted the powdered stuff from the fridge.  This works in a pinch; if you're in a similar bind, cut back the amount you use (I used 3/4 cup) so your crackers aren't too dry!Mix until crumbles are pea sized.

Now it's time to add the cheese!Stir together until incorporated and then form into cheddar rolls.  Wrap these rolls in plastic and chill for at least an hour.  I usually make the dough a couple of days in advance OR freeze the dough and use right before a party.After chilling the dough, slice into 1/4 inch rounds.Place on a greased cookie sheet and bake in a preheated 375 degree oven for 10-12 minutes.Allow crackers to cool for a couple of minutes before moving to a rack to cool completely.
