Best Baked Beans

I just made these for Memorial Day weekend as my contribution to the family gathering. If you're looking for your side dish, may I remind you of this recipe for baked beans?? ************

I know, I know! You already know how to make baked beans!

There are a gazillion options at your grocery store and the most challenging part is deciding which brand to buy.

I've always felt the same way until my friend Sue ruined this dish for me.  And by "ruined," I mean her version of these beans now makes me scoff at every other attempt to impress me.

(I should note that Sue ripped off this recipe from Tami who got it from ???  I don't know, but thanks to whoever devised this technique.  You're a genius!)

Here's what you need:

  • 2 medium sized cans of pork n beans (28 oz)
  • 1/4 cup onion
  • 1.5 cups brown sugar
  • 1 cup ketchup
  • 1/2 cup molasses
  • 1 tbsp. dry mustard
  • 1/2 tsp. crushed red pepper

Mix together all of the ingredients.  Preheat oven to 350 degrees.Bake at 350 degrees, uncovered, until bubbly.  This usually takes 30 minutes.After the beans are bubbly, turn down the oven to 250 and cook for 1 hour or 1.5 hours until the beans no longer appear runny.  The liquid will be closer to the molasses color.  This close up shows you the thickness relative to the beginning stage above.If you have any left over Pine Street Market Bacon, dice it up and add to this deliciousness!  Dish the beans up with your favorite meat or graze on it all day long! NomNom!
