Spicy Nuts
I have had several requests for this recipe just this week, so I thought I'd remind all of you fellow nut fans of this scrumptious recipe which belongs on every holiday snacking table!

There are recipes which I only allow myself to make during specific, narrow windows of the year, because I have no ability to control myself. My White Trash, and homemade Thin Mints top my list, and my husband makes me limit when I make Pound Cake. However, both of us have poor self-control when it comes to this spicy nut recipe.
As a result, when these come out of the kitchen, I almost always share them with neighbors, teachers, and friends to get them out of the house.
They are that addictive! Here's what you need:
- 1 cup raw Cashews
- 1 cup raw Pecans
- 1 cup raw Almonds
- 1 1/2 Tablespoons fresh Rosemary
- 2 Tablespoons Olive Oil
- 1 Tablespoon Sugar
- 1/2 tsp. Salt
- 1 1/2 tsp. Cumin (this has a strong flavor, if you don't LOVE it, use less)
- 1 tsp freshly Ground Pepper
- 1/4 tsp. Cayenne Pepper
Put your mix of nuts into a bowl. I usually start with 3 cups total nuts (and that's what the recipe proportions are for above), but in the pictures below I had doubled the recipe. Feel free to change the mix of nuts, but note that the spices stick best on the pecans, so don't cut those back!
Combine all of the dried spices (so NOT the rosemary!) into a small bowl and set aside.Heat Olive Oil over medium heat for a minute or two.Chop rosemary into fine pieces and put in with the oil. Heat for an additional two minutes so the oil is infused with the rosemary. Pour over the nuts.Stir until all of the nuts are coated. If you notice excess oil in the bottom of the bowl, add a few more nuts, a handful at time until the oil is mostly gone. Top with the spices. and stir thoroughly. Spread nuts into a single layer on a baking sheet and bake at 300 degrees for 20 minutes, stirring the nuts at least once during the cooking time.Allow the nuts to cool and then place in a bowl to serve. You may notice this bowl isn't filled to the top.
I think someone got to them before I took a picture. Hmmmm.
