Easy Kale Salad
Have you noticed how Kale is popping up all over the place? Nothing like a little press about being a “Superfood” to make everyone rush to put this bitter green on menus and in salad bars. For me, the problem has been finding a version of kale that doesn’t make me feel as if I’m taking my medicine. For the last few weeks, I've been experimenting with different techniques and mixes and finally have a combination I love.
Here’s what you need:
- 4-5 large Kale leaves
- The “interesting” element – either roasted veggies OR pecans and craisins OR shredded chicken and grapes OR something else you fancy!
- Homemade salad dressing (recipe found here)
Select stems without any wilted leaves. Remove any parts that are discolored.Break off the soft leaves from the rib/stem.Place the leaves into a pan of water with a pinch or two of kosher salt.
Wash the leaves in the water and rub the greens firmly in a "massage" like motion. This will cause the leaves to break down and wilt. DON'T SKIP THIS STEP!! By massaging the kale you'll be breaking down the bitterness of the greens. The water will look like pea soup by the time you're done.The wilted greens will look like this.Drain thoroughly.
Chop finely.
