Homemade Tag-a-long Treats

Have you ever noticed how there's a lag between when you run out of holiday treats and when the Girl Scout cookies arrive?  I can't wait for my batch of shortbread and peanut butter cookies, but I've taken matters into my own hands for thin mints and tag-a-long fixes. If you find yourself similarly looking to cure the craving, you only need three ingredients and a little bit of time.

Here's what you need:

  • Ritz Crackers
  • Smooth Peanut Butter
  • Chocolate bark

Spread a layer of peanut butter across the ROUNDED part of the Ritz.  The "back" or smooth side of the cracker looks best when dipped in chocolate.Melt the chocolate bark in a narrow glass bowl in the microwave.  Since you're going to dip the crackers, you don't want a large bowl. Heat for 30 seconds at a time between stirs to make sure you don't overheat and "break" the chocolate.Dip the peanut butter sandwiches in melted chocolate, making sure the outer parts of the cracker are covered.Put cookie on wax paper to dry.  Use your finger to touch up the place where you were holding the cookie for it's chocolate dip!I've never figured out how to make them look perfect, but no one's ever complained, so I don't worry about it!
