Easy & Healthy Cucumber Dip
If you're like me, you love cream cheese. In fact, maybe you have a hard time controlling yourself around the gorgeous smooth white cheese. Wouldn't it be nice to have a healthy tasty alternative? Well, this is your dish. No more excuses and it's oh-so simple.
Here's all you need:
- 2 cups plain Greek yogurt
- 1 cucumber
- 1/2 cup golden raisins
- 2 Tablespoons fresh mint (or 2 tsp of dried mint)
- Salt & Pepper to taste
Dice cucumber into even pieces. One salad cucumber should equal a cup of diced pieces.
Chop the mint.Mix all of the ingredients together and add salt & pepper to taste.Chill until ready to serve. May be made a day in advance.Serve with pita chips as shown below or serve to accompany a curry or otherwise spicy entree. Deeeeeelish!! Enjoy!
