Avocado Toast
For years I skipped breakfast. What a fool.
There's so much goodness to be had with just a little effort. My latest foray into spicing up my breakfast plate came via a Twitter visit (to the NY office, not my feed!). You see, I was fortunate enough to stop by the Chelsea offices on a Wednesday which happens to be "Avocado Toast" day.
I had no idea this was a thing, but boy can I get behind it!
I've spent weeks enjoying this toast because, in part, it's so easy to make a single serving. Just adjust the ingredients according to how many pieces of toast you want to eat. Scale what you serve accordingly.
This is all you need:
- Hearty Bread (I use whole grain)
- Avocado
- Hard-boiled egg (use last week's technique for perfect eggs!)
- Assorted toppings (capers, onions, cilantro, hot sauce - whatever you have available)
- Olive oil (if you have flavor infused oil, use it here!!)
- Salt & Pepper
Toast the bread so it's a rich brown. Note - this is not the time to go with "light" bread. You're about the load up the break with all manner of goodness, don't worry about carbs! Then, cook, peel, and cut an egg into chunks.Cut out the amount of avocado you need for your toast. I typically use 1/4 of an avocado for one toast.If you're setting up a "toast bar" like the twitter cafeteria, I think pre-cutting the avocados into quarters still makes a great presentation.Smash the avocado onto the toast. (If the avocado isn't perfectly ripe, smash in a bowl so you don't rip up the bread).Top with egg, capers, and drizzle with a little olive oil and top with salt and pepper.Play around with how you top the toast to find your favorite combination and start enjoying breakfast!
