Amy's Easy Lemon Cookies

After a long time sitting on the bench, I made these cookies again last week and was reminded of their utter deliciousness.  If you haven't tried them (or haven't tried them in a long time), they are SO great! **********************

Everyone should have a few SUPER easy recipes committed to memory. This is necessary so when you're away from home and suddenly need to contribute to a meal, you know exactly what to make.

Such was the case when my sister, Amy, came to visit a few weeks ago. I had been doing most of the cooking (which I LIKE to do), but Amy was determined to add something to the food fest. On one of our grocery store runs, she grabbed a handful of ingredients and has added a new favorite to my "pantry" recipes.

Here are the five things you need:

  • 1 box lemon cake mix
  • 2 eggs
  • 1/3 cup oil
  • 1 cup powdered sugar
  • 1 lemon (you'll need 2 Tablespoons of juice and 2 teaspoons of zest)

Note, the list above makes about 2 dozen cookies, so Amy usually doubles it. I don't because I have no self control with these bad boys. Your call on what to do! To make, combine the cake mix, eggs, and oil.Stir together until a dough forms.Drop by rounded teaspoon on ungreased cookie sheet.Bake at 375 degrees for 8-10 minutes.Allow to cool on the cookie sheet for a minute or two, then move to a rack.  Because these cookies have a glaze, I put paper towels beneath the cooling rack to help contain the mess.Meanwhile, make the glaze by combining the powdered sugar, zest, and juice.Whisk together.Using a teaspoon, top each cookie with the glaze.Display on a pretty plate, take a picture, pin it, then promptly lick the bowl.I take my cookies with a cup of tea!
